Leek & Tofu Scramble

A delicious, light, quick and nutritious meal, perfect for the springtime.

You will need ....

  • 250 g finely shredded leeks
  • 250 g firm, organic tofu
  • 1 tbs sesame oil
  • 1 tbs fresh ginger juice
  • 1 tsp Shoyu or Tamari
  • 0.5 tsp lemon juice

Leek & Tofu Scramble Directions

  1. Drain the tofu and squeeze gently in kitchen paper to remove the excess water then mash with a fork to a scrambled egg consistency. Heat the oil in a wok or heavy frying pan.
  2. Grate the ginger root and squeeze out the juice. When the oil is hot, add the finely shredded leek and stir fry for 3-4 minutes. Add the scrambled tofu and stir fry for a further 5 minutes.
  3. Add the ginger juice and season with Shoyu and lemon to taste. Serve hot with wholegrain rice or noodles.

Recipe notes

Good with rice or a wholegrain of your choice and a freshly pressed salad.
