Luxury Chocolate Mousse

You will need......

  • 200 g Raw chocolate, cacao or naturally sweetened dark chocolate
  • 1 tbs Flaxseed or similar light oil
  • 300 g Silken tofu, well drained
  • 60 ml Maple syrup or coconut flower nectar
  • 60 ml Soya or other plant based milk
  • 1 tsp Lemon juice
  • 0.25 tsp Vanilla extract
  • 1 tbs Light tahini

Luxury Chocolate Mousse Directions

    1. Melt the chocolate with the oil in a bowl over simmering water
    2. Remove from the heat, whisk until smooth and leave to cool for 20 mins
    3. Place all the other ingredients into a food processor and puree until smooth and if the mixture is too thick, add a splash more soya milk
    4. Add the melted chocolate and process until well blended
    5. Transfer mixture into 6 ramekins, cover with cling film and refrigerate for 2-3 hours until set

Recipe notes

This dessert is very rich so a little goes a long way. Will keep in a refrigerator for several days if you can resist it!
